I have noticed that after my son has been watching movies/videos on his iPad2,
latest IOS 5… they self delete( - not self destruct - Mission Impossible),
I have video settings in iTunes to auto sync - manually selected videos. Is
there another setting I have missed that says 'delete

In iTunes, if you select the iPad in Devices, then Movies, you can
automatically include all movies, along with a setting that allows you to view
a variety of movies according to how recent or unwatched they are.
Maybe you could use this setting to work up a solution for your problem.
