Breakfast Burritos 1 lb. ground sausage 1 dozen eggs 1 dozen flour tortillas (soft taco size) 2 cups shredded Mexican blend cheese 1 cup salsa Brown sausage in skillet. Drain off fat. Lightly beat eggs and scramble with sausage in skillet. Set aside. Wrap tortillas in a double thickness of damp paper towels. Warm tortillas in microwave for 60 seconds. Place about 1/3 cup of the egg sausage mixture on to each tortilla. Sprinkle with some cheese and add 1 teaspoon of salsa. Roll up burrito style. Serve immediately. Or place burritos on a cookie sheet and flash freeze for about 30 minutes. Wrap each burrito in plastic wrap and place wrapped burrito in a large ziploc bag. Freeze.
