Grilled Steak and Onion Salad George Forman Grill Serves/Makes 4
1 pound boneless beef sirloin steak 1 large onion cut in small cubes 1/2 head romaine lettuce, washed, dried and torn in bite size pieces 1/2 head green or red leaf lettuce, washed, dried and tornin bite size pieces 1 cup baby field greens (optional) Tarragon-Dijon Dressing: 1/4 cup extra virgin olive oil 1/4 cup fresh lemon juice 2 tsp Dijon Mustard 1/2 tsp. fresh tarragon or 1 tsp. dried 1/2 tsp. salt (optional) Grill the steak in your greased and preheated George Foreman Grill for 4 1/4 - 5 minutes or longer for desired doneness. Remove and set aside to cool. Place the onions on the grill, season to taste; cook for about 3 minutes. When steak is cool enough to handle, slice it across the grain into bite size strips and place in the salad bowl to cool. Add the salad and the dressing; mix well and serve.
