Cauliflower, blue cheese and spinach frittata ------------------------------------------- 1 tablespoon olive oil 1 leek washed, halved [ if big ] lengthways and thinly sliced or[ 2 small ones ] cut into small pieces 2 cloves of garlic 3 1/2oz baby spinach [ 100 gms ] 3 1/2 oz blue cheese [100 gms ] 1/2 cup of light cream 8 eggs salt and pepper ============== Preheat oven 180 degrees, grease and line a 8 inch [ 20 cm ] square pan with non stick paper. Heat oil, add leek, cauliflower and garlic. Cook, stir often foe 5-6 minutes until leek is tender add spinach leaves, remove from heat, toss until leaves just wilt. Spread cauliflower mixture over base of lined pan. Crumble over blue cheese. Whisk eggs and cream together season with pepper and salt. Pour eggs over cauliflower and cheese mixture, bake for 25-30 minutes until puffed and golden brown. Set aside for ten minutes and serve.
