SALISBURY STEAKS
 
2 lb Ground beef
2 Eggs, slightly beaten
1/2 ts Salt
1/4 ts Pepper
1/4 c Finely chopped onion
-(optional)
1/2 c Fresh fine bread crumbs
3 tb Margarine
1/4 lb Fresh mushrooms, sliced
1 tb Oil
1 1/2 c Beef Broth
2 tb Flour
 
Combine first 5 ingredients in mixing bowl. Shape into oval patties.
Sprinkle both sides of patties with bread crumbs, and  press crumbs into
patties. Chill in refrigerator at least 30 minutes. Melt 2 Tbs margarine in
a hot, heavy skillet. Saute mushrooms. Remove them from skillet; add oil and
remaining margarine. Add patties, and
brown. Remove to a platter. Add broth to pan drippings. Blend flour with a
small amount of cold water to form a paste. Add to skillet, and bring to a
boil, stirring until smooth and thick. Add mushrooms
and stir. Add steaks, and simmer until done, about 20 minutes.
