Simple Snow Peas Stir-fry

Stir-frying snow peas brings out their sweet flavour

Serves 2 to 4

INGREDIENTS:
8 - 10 ounces snow peas
1 tablespoon canola or olive oil, as needed
2 - 3 tablespoons soy sauce (light or Kikkoman)

PREPARATION:
Bring a large pot of salted water to a boil. Blanch the snow peas in the
boiling water for about 2 minutes, until they turn a bright green. Drain the
peas and rinse briefly under cold running water. Trim any loose ends.

Heat the vegetable oil in a frying pan or wok.

Add the snow peas. Stir-fry briefly on medium-high heat, then add the soy
sauce. Stir-fry for another minute and serve.
