I would try this instead, Maxim:
\documentclass[12pt,letterpaper,oneside,draft]{memoir}
\usepackage{fontspec}
\usepackage{polyglossia}
\setdefaultlanguage{french}

Some lines of text aren't hyphenated automatically, most of the time
because there doesn't seem to be hyphenation rules
