If the main question concerns the reference volume Vo, here is my
understanding of your proposals:
1 - Vo=matrixPorosity*cellVolume for a cell in the intact matrix
2 - Vo=aperture*area+matrixPorosity*cellVolume for a cell cut

content showing a Laguerre graph in 3D but you can find inspiration by looking
at a Voronoi graph [1] (some polygonal faces are visible on the outer contour).
