Patrick, (This is probably more appropriate on the zfs-discuss list which I have copied.) I know of no way to simply add the third disk and migrate from a mirror to a raidz, but I'm sure someone will correct me if I'm wrong. I would plan on implementing your second alternative which is to backup, destroy and recreate the pool, and then restore.
