Try using md5sum to check if your downloaded ISO image is corrupted.
What version of Adaptec Easy CD-Creator are you using?
I'm using version 3.5c and I'd never experienced troubles burning the Red
Hat 7.1 ISO Images, however I know that earlier versions produced corrupted
CD-Roms.
