Well, the easiest I suppose would be to use kickstart. The kickstart
process is well documented (and that's the most up to date doc since it
changes a lot with every Red Hat Linux release) in the Red Hat Linux
Installation Guide (IIRC).
To install additionnal packages or to remove some, you can do that in the
kickstart config file in the post-install section with "rpm -i
ftp://ftp.etc..." for example, since changing the base installation will
require editing of the "RedHat/base/comps" file and regenerating the
"hdlist" file with anaconda.
For other minor config changes that can't be set in the kickstart config
file, the post install section can be user again to incorporate shell
scripts and commands... you can even execute some before the first reboot,
and IIRC you can even choose to have your entire scripts parsed with the
interpreter you want (perl...).
