I installed the 7.3 packages on 7.1. I haven't noticed any problems. If there are unresolved dependencies, download those packages from 7.3 also. I still have rhs-printfilters installed rather than foomatic. There's a section in the documentation on setting up LPR compatibility via xinetd. If you use Samba, you'll need to restart it after CUPS comes up.
