if you are on the receiving end e.g ( ISP) you can sniff the packets that come through your RAS ( Remote Access Server) all you need is a tool called sniffer pro ver 3.0.5 i think it is available for download , this will enable you to analyse the PPP packets that come in/out via your RAS. Well the well know risks of not encrypting data over such a medium is that you could get a man in the middle attack or any other type of attacks , so if you looking at making this secure you could do vpn tunneling over your dial up connection straight to the private network, you can look into a couple of tunneling protocols.
