You won't need a very high-powered box to perform firewalling and NATting.
I'm currently using a P133 / 64Mb RAM on a 1mpbs link and it's more than
enough.  RAM is more important than CPU speed or disk space (in your case).

Yes, each PC will need it's own network card in order to function on your
LAN.
