AFAIK it will depend on the mail tool you are using.  There is an
intergrated plugin for Outlook (and Netscape I **think** ). 
Otherwise you can either cut - sign/encrypt - paste OR sign/encrypt
current window either way still will require you to use your
passphrase every time.
