If you want the real skinny on hardening Windows systems (and removing unnecessary services and such) check out "Securing Windows NT/2000 Servers for the Internet" by Stefan Norberg. It's available from O'Reilly (www.oreilly.com) and should be required reading for anyone who wants to properly secure a Windows box (in my opinion, of course).
