Hi Joanne,
As far as I know, there is no way to know if someone opened your mail, but
if it did not bounce (in that case you would have received a notification
from the server) sure they got the mail.
The only program I read can tell you the person received your email is
Pegasus (www.pmail.com) but it requires that both sender and receiver have
Pegasus set for this function.
