Add a DERBY_HOME option to Derby backupers

Derby backupers extract the database path from the URL, however Derby prefixes
this path with DERBY_HOME (there is no absolute path actually).
We need to provide a DERBY_HOME option so that the backuper can backup/restore
the right directory that Derby would find relatively to its Derby home.
