The fetchmail configuration pages - http://james.apache.org/server/2.3.0/fetchmail_configuration.html - document the wide range of mail attributes set in a mail injected by fetchmail.
To take things to extremes, you could use the attribute matcher to detect mail injected by fetchmail and send it off to a branch of the mailet chain specific to fetchmail injected messages. I don't see the need, but it can be done using existing functionality.
