I'd start with JavaMail (http://java.sun.com/products/javamail). But, I
don't think you actually want the Servlets to be doing this work. You
should probably have a robot process collecting the email submissions and
putting them in the data store. Then the servlets job is to pull data from
the data store and display it on the client.
