Or, for a more general solution, use a prepared statement with a host variable:
String searchString = "%'%";
PreparedStatement stmt = conn.prepareStatement(
"select * from table where name like ?");
stmt.setString(1, searchString);
ResultSet r = stmt.executeQuery();
