I don't know much about how Arch packages are put together, but on the Debian/Ubuntu side of things, it would increase the maintenance burden significantly if I had to track, update and upload 3 different packages. Because they are all inter-related (i.e. you need matching versions), it's quite convenient to have them all in the same source package in my opinion. Then it gets built into 4 different binary packages (-daemon, -data, -gnome and -kde).
