Actually it does ring a bell. Instant messaging feature has been merged in the master branch yesterday. You should have in sflphone-client-gnome/src a file named ui.xml, that describes the menu and toolbar items. An InstantMessaging action has been added in this file, at two different places: in the menu section and in the toolbar section.

Anyway, try to run sudo make install before starting the client, it is maybe still using an old version of ui.xml.
