The logs you've included below appear to be mostly related to launches.
Are these from, or can you check in <install-dir>/var/log/ for the
following:

- error.log
- jserver*_error.log
- stderrout.log

See if there's anything interesting looking happening in there that
might have happened over the weekend?

Couldn't find anything any more informative in the error logs
unfortunately. Both times it has happened, existing sessions continue
to be serviced, but it won't accept new sessions. The good news is that
it only seems to happen after a couple months of uptime, so it's not too
regular of a problem. The bad news is that it seems to happen at really
bad times for my client.

Brian ... just read your first message again. I don't really see a clear description of the problem you're experiencing.. just this:
"Second time it's happened now, where the server side has failed over a weekend."
Can you tell me how that manifests? What does it look like? You can't get to a login box? You get to the login box, but you can't complete a login? You can login, but you don't get a webtop? You get a webtop but you can't launch anything? "tarantella status" hangs? etc.

I'd recommend gathering the following during a failure and before corrective action is taken ..
[assuming install dir is the default /opt/tarantella]

#1  kill -QUIT  `cat /opt/tarantella/var/info/jserver.pid`
Dumps JVM thread dump into /opt/tarantella/var/log/stderrout.log, useful to find
out if there's a problem inside the JVM.

#2 tarantella info --all
Dumps large amount of system data into filename given.

#3 pstree, pr 'ps -aef| grep tta'
    Shows if there're missing/problem/defunct SGD process(es).
.. then forward them to someone knowledgeable in such things :)   You can give me a shout to see if I'm available, otherwise hit the list to see who's available and forward the information direct to them.

Hope this helps..
Curtis.
