If the thermostat is opening, check the radiator or fan. The thermostat only lets the radiator do its work, if it can't remove the heat you will overheat.

Ive had one car have problems with overheating that wasn't due to a head gasket. ALL the rest were. That car had a bad wire at the fan and a bad radiator. I fixed each and the car started running cooler. Three weeks later the gasket went. A lot of people want to think it's something other than the gasket, but usually is. Good luck.
