We're talking about something different when we create a logo. We are
creating a trademark (whether legally registered or not), so it will not
be free to use - it will be limited by trademark law, and managed by the
Apache Public Relations Committee.

However, for us to use that logo within ours we'll need rights to that
image. I doubt we'd be able to use it in that context with a
creative-commons license.

A simple solution would be for you to grant the ASF rights to use it, as
it sees fit. This would not prevent you from continuing to license it to
the world using the Creative Commons license.

Is that something you would be willing to do?

The combination of the logo and the "Shindig" word would be our
trademark, and your logo would continue to have its own life.
