Kent,

first, I highly recommend using exiv2 rather than exif to look at metadata.  
You can use it like this:

$ exiv2 -pa DSCN1010.JPG

exiv2 will tell you about EXIF, IPTC and XMP metadata, whereas exif displays 
only EXIF.

We have a wiki page that talks about which metadata tags Shotwell and other 
programs write to:

Unfortunately the table formatting on that page was destroyed when we migrated 
from Trac to Redmine last year.  The page is still somewhat readable, however.  
If anyone wants to clean up the formatting on that page, the change would be 
welcome.
