Because with those 3 buttons you can get rid of the three icons for those apps, which saves lots of valuable screen space. If you don't like it, you can configure it. Just edit /usr/share/applications/*. Modifying illume is certainly much more difficult and painful than editing the .desktop files to suit your preferences.
