I am no expert but I believe that the beagleboard openembedded might be
a good place to start if you want to use OE on the MID.

But I would also expect that a plain SHR might run on it
(May need an extra X11 server and there are quite a few things
that don't work in Android, whose will also have to be fixed)

I don't think so, I would assume that the SHR devels are happy with any one 
"porting" SHR to another platform.
(Even though it is not a phone which is the purpose of a lot of the SHR apps)

It seems like a quite open piece of hardware, the wifi driver seems to be
closed source though.
But they do even include a JTAG port (as testpoints/smd pads).
All in all a lot more open than my ageing Nokia 770 or the very nice looking
Archos tablets.

It will most likely require a lot of work to get it running perfectly..

It is a shame that it can't make a phone call
(the 3G module probably can only handle data).
But maybe some day some one finds/creates a mini PCIe module that allows
for voice calles to be made.
(Then we would still need a FSO driver/backend for that)
