Having recently done this for a Freerunner, I'll give you a few notes
on things I ran into:

1) Windows apparently won't partition SD cards. This is because
Windows treats them as network disks, and expects network disks to be
partitioned ONLY by the machine that provides them (it's apparently a
safety thing). But, I don't know that the n900 requires multiple
partitions on SD, so this might not be an issue for you.

2) The ext2/3 filesystem could be a problem, because this isn't a
Windows filesystem. I resorted to using a Linux-from-Scratch LiveCD.
For safety reasons, I'd recommend storing the necessary files on a usb
memory stick, and disconnecting all of your drives while running the
LiveCD. That way you CAN'T accidentally repartition them.

3) When using cfdisk (from the LFS cd) to partition the SD card, it
never seemed to actually get partitioned. fdisk, on the other hand,
did work, and fairly easily. If you have to partition, then be VERY
willing to move from cfdisk to fdisk, because it's more likely to
work.
