I can't say for sure if it would affect the flu directly, but it would certainly keep secondary infections from becoming a problem.
I would take small doses often, say, 1 Tablespoon (1/2 ounce) every 30 minutes or every hour as long as I had symptoms. I would taper off on the number of doses as I got better. Eight ounces at 1/2 ounce per dose would give you 16 doses per day, at 1 hour intervals. That is not even an excessive amount of CS.
