If you assume that the same molar amounts should be used, then you should use 1.08 times as much sodium ascorbate BY WEIGHT. Also you should be able to weigh out 176 grams of ascorbic acid and 198 grams of sodium ascorbate, and find the ratio of of them by volume, and use that ratio. I don't have them, so am unable to measure the differences in density.

After you dissolve lecithin and ascorbate in water, run them together in
blender before pouring into ultrasonic cleaner.
