Here is the Basic Recipe
_*Elderberry Syrup*_
Makes 1 quart (1l)
Make sure the cookware you're using is non-reactive and your clothes are
stain-friendly. If you use an aluminum pot, it'll get stained and the
next batch of mashed potatoes you make may come out pink. Ditto for
spatulas and anything else to plan to use to stir the syrup while it's
cooking.
If you live somewhere where huckleberries are available, you could use
them instead.
2-pounds (1kg) elderberries (see note below), woody stems removed and rinsed
4 cups (1l) water
2½ (500g) cups sugar
one nice-sized squirt of freshly-squeezed lemon juice
1. Put the elderberries in a large, non-reactive pot with the water.
Bring to a boil, then reduce heat to a low boil and cook for 15-20
minutes, until tender and soft.
2. Pass through a food mill, then discard the skins.
3. Pour the juice back into the pot (I use a fine-mesh strainer again at
this point, but I'm crazy...), add sugar, and cook at a low boil over
moderate heat for 15 minutes, until the syrup has thickened. Add a
spritz of lemon juice. Cool completely.
4. Pour into a bottle or jar and store in the refrigerator.
My Notes:
Once this is done I add an amount of vodka for preservation.
Then it needs no refrigeration. Note : If the alcohol is a concern
to you You could substitute a couple of drops of GSE You could
also use Raw Honey instead of the sugar,
but don't cook the honey. Add it after you have boiled your berries
and done whatever straining you choose to do.
I also run my berries thru the Omega Juicer to separate the pulp from
the stems
and since Im creating a medicine instead of a culinary syrup I
don't bother with the jelly bag either, but rather just use a
Sieve to catch the seeds. If you don't have an Omega Juicer just
follow the instructions in the basic recipe.

As I said, it throws up RED FLAGS for me. I take NO
prescription or OTC preparations. I don't worry about colds or
flu. Between Raw Garlic, CS, Lugols and elderberry syrup- that I
make myself. I stay healthy. If one is disposed to eating out
one is going to be exposed to all manner of stuff one does not
want in ones system. Especially if its Fast Food.
I made a decision years ago that I wanted to be free of all
commercial stuff. That meant some Major Life Style changes. It
meant Major changes in eating habits.
Those changes have become second nature by this time and did not
realize until your post just how far I had come with this. What I
do is of my own choosing, if you or anyone else chooses to do
otherwise that is your ( their) business, but I still see
very large RED FLAGS when someone says Take my pill and you can
eat whatever you want, you don't have to change anything. This is
the classic Quick Fix that is a trap that Americans at least
have fallen into over the years. I meant no offense, was just
stating my opinion since someone asked.
