You can take a marked magnet and see which pole repeals, if it repels then it is the same pole as the marked one. Or you can hang it from a string, or float it on a cork, and see which end points north. The end pointing North is the north seeking pole and the pole pointing south is the north pole of the magnetic. Many people confuse North seeking pole with north pole and thus there is a lot of confusion on this quite often. Or you can take a compass and see which pole attracts the red end of the compass needle. That end will be the north pole.

It doesn't matter for water structuring since you put the north pole of one and the south pole of the other facing toward the water. All you have to do is what I had said before about making sure the poles attract each other when building the device, if you do that, one will be North and one South as required, even if you do not know which is which.
