I don't know a ready source for this, but I used to use an absorbent called Zeolite to absorb nitrites in my pond water. It looks like activated charcoal granules, only it's white and does a pretty good job. I kept it in a porous plastic basket-like container and "recharged" it every 3 months by soaking/rinsing it, container & all in a clean bucket of salt water (rock salt & tap water), then rinsed thoroughly in fresh before returning to the pond. The salt water purges the buildup of nitrites and the fresh rinses it all away.
As for human drinking water consumption, I have no idea if this would work for you or not...I do know that the basic premise works just fine, though & my koi were always healthy and the dogs & cats at my house preferred to drink out of the pond instead of the bowl in the house if they could.
