Is it correct to say you are making EIS without using distilled water? If so, you are taking unnecessary risks. You can mix mineral water with EIS after it's been brewed, I suppose. But the vast majority of EIS brewers use the purest distilled water they can get their hands on.
Since I supply CS to HF stores, pharmacies and doctors across Canada, I am a CS-brewing purist. But, in fact, missionaries in India make CS with water from the Ganges river (shudder), and it has a wonderful affect used against malaria, etc. In fact, brewing CS in the water is how they sanitize it. As far as the risks of using non-distilled water, all you have to do is stop brewing it before it looks like coffee. Whatever water you use, if your CS is clear, the particles are not big enough to even start to cause argyria. Faith says his CS is clear, using spring water. Heck, I will even drink yellow CS freely without any hesitation (and lets have no yellow water wisecracks, please!). Its not the minerals that are any problem, its that minerals can cause the particles to be bigger. But that is easily ascertained by observing the color.
