Can we really do this?  I have a SilverGen and I have heard alot of good
things about colloidal copper.  Would it be safe to drink, making it the
same way we make CS?  Could I use the ppm meter the same way?  And what ppm
would be recommended?

No, I don't, but I'd bet you could substitute copper wire for silver wire
and produce colloidal copper instead of colloidal silver with a standard CS
unit.
