This was possibly fixed in recent updates where a problem with PDF
compression was fixed.
However it could mean that there is no manual control of the quality /
compression settings. I will understand it that way and merge duplicate
bugs.

Title:
Simple scan does not allow changing quality settings when saving
Status in Simple Scan:
Triaged
Status in “simple-scan” package in Ubuntu:
Triaged
Bug description:
Binary package hint: simple-scan
Simple scan should allow some basic quality threshold settings to
allow some control of the eventual file size. For example, a 10 page
PDF was saved as a 13MB file, which is borderline too large to send
around. It should ideally pop up a slider showing quality and
projected file size.
