Now I'm really worried ...

I sent emails from one of my genuine addresses to two fictitious addresses at my mail server ... [EMAIL PROTECTED] and [EMAIL PROTECTED]

Both were delivered. I did not get a reject msg from my mail server. They are not in the Unknown mailbox (which was earlier set to Discard Mail with a 0k account size - since reset to Store in Folder and 100K account size - to see what happens).

If the Unknown account is set to discard mail, it will discard mail, not keep it. Mail routed there will be accepted but not stored anywhere.

Where are they going? Why aren't I getting a 'user unknown' email?

You are not getting 'user unknown' because you have that (deeply unwise, one might even say very stupid and pointless) Unknown account configured. The mail is being accepted and dropped.
