A ‘From’ address represents an AOR NOT a contact address.

Why in the FROM header there is sip:[EMAIL PROTECTED] instead of  sip:[EMAIL PROTECTED] ?

 The below is from 3261, which clearly states that the 'From' in the request belongs to the initiator/callee.. which in you case is the gateway. I hope this is what you were trying to get clarified.

The From header field indicates the initiator of the request. This may be different from the initiator of the dialog. Requests sent by the callee to the caller use the callee's address in the From header field.
