Every reinvite or update renegotiates the session timer. So in each, if you fail to specify the session timer, it goes away. So yes, you can stop it after it was started. But note that it only requires one end to support it, plus something in the middle to want it, to establish a session timer. So it will really only go away if both ends refuse to support it.
