If you click "expression" next to the filter expression and then expand the SIP tree in the "filter expression" dialog there is a very extensive list of the SIP header fields you can use in your filtering. Some of the comments actually name the RFC that they are defined under! Also if you select Help:Manual Pages: Ethereal Filter it will bring up the documentation.
