We have several clients with sipX on vmware in production.

But its very important to set it up properly, we always dedicate a CPU tot he 
SipX vm and we make sure it's resource sharing is set to high priority.

We do NOT use vmware when using sipXbridge.  We had too many voice issues with 
that, but when we are using an ingate or FXO device, vmware works fine becuase 
nearly all the voice is not runnign through the SipX server, except for 
voicemail and autoattendant...and without lot of our clients using exchange 
2007 for voicemail, little voice is on the sipx server.
