Regarding the first request, no, no GOOD open source voice recognition exists. 
If you are willing to learn a bit of Asterisk programming you can integrate 
http://www.lumenvox.com/ with Asterisk and use PHP-AGI to develop some really 
neat IVR applications.

The best XMPP client depends on your needs. For enterprise locations Spark 
seems to be the xmpp client of choice, some people prefer Pidgin though. I've 
never gotten Pandion to work properly with sipXopenfire but I like it's 
interface best.
