Sending-profiles to the phones won't solve it as they aren't registered - you 
must send profiles to the server.  As in:

System -> Servers

Check the box - click Send Profiles.

There is some change (or combination of changes) that requires the profiles to 
be sent and services restarted.  Now, anytime I change multiple things - I send 
profiles.

The lack of any log activity for hours would be a clue.
/var/log/messages may be a place to look.  Also somebody mentioned to "send 
profiles" to the phone.  That is always a good starting point when 
troubleshooting.
