You can do it from the command prompt.
Simply go to the directory containing sipXezPhone.exe, and launch it by entering the following into command prompt:
 
sipXezPhone.exe -test
 
This exposes a panel on the right hand side of the main window.  Simply enter a sip url into the edit box and press the + key.
This will invite a participant to the conference.  Repeat to invite other participants.
 
Only very basic conferencing functionality is available through the interface - inviting and removing participants.
