You've activated the "strike out" note tool mode (Tools > Note Type > Strike Out, or the tool mode toolbar item). You can just switch to any other tool mode, and you won't strike out.

Note that there are separate note tool modes (that change the behavior of mouse strokes) and separate "New note" actions (Notes menu items, or the Add Note toolbar item, that just add a new note).
