The information is not stored IN each file. Extended attributes are extra data 
associated with each file (where they're stored exactly is an implementation 
detail of the file system). Backup tools ideally should backup all the 
information in and associated with the file, including extended attributes. 
However, not all backup tools do this, which is why some backup tools are 
better than others. There is some information and links about all this on the
