In TexShop on my Mac Pro 4,1:
TexShop --> TexShop Preferences --> Preview --> Double Page Mode -->
Page One On Left/Page One On Right
... is a partial solution, however it is not only partial but ponderous
as well in that TexShop has to be restarted for the preference change to
take effect.
The upshot of this is that looking at TexShop code might provide such
facility.

No, it is not possible to display pages side by side this way, or for that
matter any way other than already supported. The fact is that the PDF
display is done by Apple's code, so they control what the options are.
