Well, UAC is probably something that should be left turned on at the very least set to 33% for all new computer users.
If you are very careful and feel confident that you can stop unseen software from installing itself on your computer then feel free to disable UAC altogether. I will warn you that if you click on a bad link when in IE and you don't have UAC turned on, your computer can be instantly infected with something. UAC can serve as a safety net for preventing these malicious things from getting installed. I really wish there was a way of setting windows to automatically turn on UAC when I launch IE only. Until then, I'm happily running malwarebytes pro, and so far has served the same purpose of UAC as MB prompts me here and there when I click on a bad link on the web.
